DRY CURED HAMOur special cure mix is applied by hand to each ham. The ham is kept at 40 degree while the salt and sugar is absorbed into the meat. The hams are then stored at a warmer temperature and lower humidity to allow the cure mixture to equalize throughout the ham creating consistent color, odor and flavor. Next the temperature is set at a constant 90 degrees and the heat will give the ham is golden brown color.
